Quinta do Couselo – Barbuntin

Albariño. Rias Baixas, O Rosal subzone.

Tasting note:

Pale yellow with green notes.

At nose it presents a strong stone fruit in syrup scent (plump, peach) with floral undertones, very varietal.

At mouth, good entrance, fresh and mineral. With great persistence and personality.

Pairing:

Shellfish, oysters, blue fish, blue cheese.

Elaboration: 

Grape selection at the vineyard. Temperature control since the grape arrives at the vineyard. Selection of the grape in tables bunch by bunch. Light maceration of the grape in cold stores before the pneumatic pressing. Separation of the musts. Static racking. Low temperature fermentation. Ageing on lees during 4 months. Stabilization on stainless steel tanks till they reach the enough maturation for their bottling in June.
