Treat Craft Pastry Bonbons

These are Matt Jones of The Treat Craft Pastry‘s new Trencadís series of artisan chocolates, with innovative flavors, we’re warning you, you won’t be able to eat just one.

And we’ll pair with FOUR catalan grenaches, everyone diferent from teh other, from Terra Alta, from l’Empordà, from Priorat and from Penedès.

 

Celler Jordi Miró, Textures de Garnatxa – Serendipity Double Mass by Aïda Miró – DO Terra Alta

Grenache

Soil: Clay-limestone
Agriculture: Organic
Alcohol: 13.5%

"Double mass, second part of the elaboration of two wines"

Concept: This wine is a reinterpretation of the "double pasta" but working at low temperature, harvesting at an optimal point of freshness prioritizing acidity and with a gentle skin work to achieve a fresh and dynamic wine.

Preparation: We make a vat foot in the vineyard, we harvest 50 kg of grapes, we crush them and we leave them in a jar of stainless steel in the vineyard until the fermentation begins spontaneously. When the vat foot is already in a tumultuous fermentation phase, we transfer it to the cellar and multiply the local yeast until it has enough volume to inoculate the must that we have in the cold.
Five days after making the vat, we will harvest the grapes, peel them and put them in the stainless steel tank overnight. After this short maceration, a part of the must is bled for the production of 'Serendipity Rosé', leaving in the tank more proportion of skins than of must (double paste) for the production of 'Serendipity Double Mass'. As soon as we separate the musts, we inoculate them with the vat foot and carry out the alcoholic fermentation at 16ºC.
During the alcoholic fermentation we also do a light work of the skins with a short and gentle remount every day, just soaking the hat so as not to extract too much tannin. When the wine has finished fermenting, it remains for 4 months in fine lees. Finally, it is filtered lightly to be bottled, deposits can form.

Tasting note: Medium maroon color with an attractive nose dominated by red fruit. Strawberry, raspberry, sweet red cherry, rose petals and white pepper. Sweet and juicy fruit dominates in the mouth, with a light body and tannins, balanced with 13.5% alcohol. Easy to drink, medium length, very nice.
The tannins give identity to this wine which is a perfect example to accompany a typical Mediterranean meal.

 

Mas Geli Pals – Notes de Negre – DO Empordà

Grenache

Alcohol content: 13,5%

It is clean and bright, with a ruby red color and light violet tones.

The nose is clean and frank with aromas dominated by red currant fruit and fresh cherry under a very elegant balsamic background.

On the palate, it is fruity, dynamic and mellow. Overall it is balanced, fine and round.

 

Grifoll Declara – El Gos Negre – Mountain Wines, El Molar, Priorat

Grenache.

Alcohol content: 13,95%

Vineyards: Traditional and sustainable, 100% winery owned

Altitude: 180-220m above sea level.

Soil: Mixture of clay and sand on terraces

Winemaking: 3-day maceration, fermentation in 10.000-liter stainless steel tanks with indigenous yeasts.

Aged: 3 months in French oak barrels.

Characteristics: Still red wine with fresh aroma and fruity flavor.

 

Muscàndia – Viader – D.O. Penedès

Grenache

Alcohol content: 13%

Dry vintage in Penedès region. Grapevines grow thanks to the high
quantity of water stored in the clay of our soils, from rains of 2020.
Hot summer and some rains at second part of August, which helped
the vines to resist and have a good maturation.

Red wine from a unique plot of Garnatxa Negra. Serra del Bosc is the
name of the parcel, which is located in Torrelavit town, close to our
cellar. Picked on 4th September 2021. Maceration and alcoholic
fermentation was done in an old cement tank from XIX century found
I our cellar and restored now. Malolactic fermentation and oak ageing
in 300 liters barrels during 7 months. Bottled on 28th May 2022.

Limited edition of 5.327 bottles.

Sensorial analysis:

  • Sight: Light red wine, with cherry colours.
  • Aroma: Clean, fruity and fresh. Barrel has not a prominence.
  • Mouth: Red fruits are the most important part. Fresh and light, as has a good
    acidity thanks to our terroir. Balances and rounded by the oak ageing, but the
    barrel notes are not having more importance than variety and terroir.
