It is a cheese made with cow’s milk, from pressed and cooked pasta.
This famous Doubs cheese, matured for months in its original territory and refined in the cellars, will offer you a soft and fruity paste on the palate. Our reserves come from the best vintages of only yellow pulp, made between May and October, an ideal period for the aromatic richness of dairy production.
It has developed during this additional 12 month period a crunchy mass density. This pasta is sprinkled with small “protein” crystals that explode on the palate and amplify its intense floral or even toasted aromas.
Comté is the first French cheese to have AOC. This denomination guarantees the traditional and rigorous process in cattle, elaboration and refinement.
